I love learning new cooking skills so when I was asked to attend a blogger event for a Vegan Sushi & Cocktail making class at The Avenue Cookery School in Wandsworth I couldn’t resist picking up a new skill!
The Cookery school is a passionate family affair that welcomes cooks of all abilities (and ages!) to join in! Opened in 2004, Chef Diana and her two children Sophie & Richard put their flair for cooking and fantastic vibrancy into all of their courses and their inviting personalities immediately put any pre-class jitters to rest!
I arrived on a windy Autumn day to be warmly welcomed by Diana & the team, plus offered delicious homemade bread and a lovely glass of bubbles to enjoy whilst exploring the kitchen! We were sampling the Thomson & Scott organic & vegan certified Prosecco which tasted delicious and contains no hidden additives and minimal sugar content. What a perfect welcome!
The professional kitchen space is well stocked & organised. Each bench has it’s own hob, prep area & all the best equipment and ingredients ready for you to perfect your cooking skills. The flowers and pots of herbs along with the lovely communal wooden table give a sense of homely charm which is reaffirmed by all the extremely friendly staff team. Also their spice rack is every home-cooks dream!
The class began with Diana giving a bubbly intro before handing over to Rich, The Avenue’s sushi expert who would demonstrate how to make our own sushi!
There were quite a few students, but the raised mirror above the station meant all of us could see what we were meant to be doing. Having been to some cooking classes before where I couldn’t see the chef, this was a brilliant feature & meant I had no excuses for not knowing what to do! Rich started by showing us how to make the perfect sushi rice, including the sushi-su that you need to make to season the rice properly.
Working in tables of 4 to prep & chop the vegetables to go in our sushi gave us the ideal opportunity to bond with those on the same table, enjoy some great tunes and test out how well we were listening! Chefs Richard & Diana were thankfully on hand to keep an eye on us and offer any help where needed. Thankfully this meant we didn’t burn our sushi rice or that would have been a disaster from the first step!
The menu for the evening was three types of sushi: a small ‘Hoso Maki’ roll, an inside out ‘Ura-hoso maki’ and a mini hand roll ‘Te Maki’. I think the biggest tips were to make sure the rice was fluffy and roll it tightly! Also the new discovery of sriracha Veganaise as a lining sauce, it’s amazing! Thankfully Rich was on hand to help give advice.
We also learnt to make a delicious Yuzu cocktail to enjoy whilst making the sushi! I have always liked yuzu in dishes, so I was thrilled to learn how to add it to a Sake yuzu Vodka cocktail using some wonderful new and favourite brands.
Despite the free flowing alcohol, I was very impressed with the sushi I was able to create! It looked reasonably neat & tasted delicious, if I do say so myself.
This event had been put on especially for bloggers and sponsored by some wonderful high-quality brands to ensure that we created the best vegan sushi & cocktails possible. We were lucky that they gave us a wonderful goody bag to take away to try this at home! The training wheels are off! Can’t wait to try the Yutaka Sushi kit for 2!
